DOWN TO THE WIRE: LAST MINUTE 4th of JULY EATS

A lot of us have grown up celebrating our nations independence with a bbq. Grilling is kind of iconic during this day of the year.  It is the thrill of summer nights, the smell of the smoke, the frequent "looky loos" that want to know what you are cooking, the fireworks going off from time to time in your backyard, that make you want to plan an amazing bbq spectacular.

Keep it healthy and serve fish tacos.  Grill off some mahi-mahi or tuna in batches so nothing goes to waste and everything tastes fresh.  Set up a lil taco station using tortilllas (corn/flour), guacamole, pico de gallo, salsa, cheese, and shredded cabbage.  Feel free to incorporate whatever toppings you like on your tacos.


Chimichurri is a great acoutrements that will brighten your 4th of July GRILL-TECULAR.  This is a sauce/marinade that is made with parsely, oregano, red wine vinegar, chili flakes, garlic and olive oil.

Limit your drink selection.  Make some agua fresca (see recipe below) and put it in a drink dispenser making it easier for your guests to access.  Clog up your sink with some plastic wrap or your sink stopper...add some ice and fill half with water...Place some bottled water or soda or beer and or all the above...and there you have an instant cooler.  There is no cleaning or dumping of water involved.  Makes your life just a little easier at the end of the day.

Agua Fresca is any combination of fruits, cereals, flowers or seeds that is blended with sugar and water and chilled over ice. You could easily turn them into an adult beverage by adding a few ouncesof your favorite liquor.



Watermelon Mint Agua Fresca:

1ea  Small Watermelon (seedless and rough chopped)
1.5C  Water
3T  Sugar
2Limes
1bu  Mint

Puree watermelon in a blender.  Strain pulp.  In a pitcher of yuor choice add the fruit puree, water, sugar, lime juice, and mint.  Add ice and quench your thirst.
