DID YOU KNOW: OLIVE OIL

Extra Virgin Olive Oil
There are many different varieties of olives that oil can be produced from.  Each olive produces a different quality and flavor profile.  The four very distinct oil grades are:  1. Extra Virgin - highest quality and little to no acidity 2.  Virgin Olive Oil/2nd Press 3.  Olive Oil/3rd Press 4.  Pomace oil (most acidic).

The limits to what you can do with olive oil are pretty endless...well okay...there is an end somewhere.  High quality extra virgin olive oils are used for finishing dishes.  Grill off a piece of fish, saute a little spinach and finish the dish with nothing more than a tablespoon of extra virgin.  (Not good to write this blog on an empty stomach).

You can use olive oils in place of any of the less healthy alternatives ie. butter or butter spreads.  The key is to find an olive oil that fits your flavor profile.  There are so many unique flavors, make sure your happy with it.

Olive oils can be used for dressings, marinades and even cooking meats, fish, or veges with. Olive oil is even suitable for frying with a smoke point temperature of 410*F.

STORING:
Avoid Heat, Light and Air.

Make sure you know what you are buying. Look for a dark golden green.  Secret:  Costco's Kirkland Brand Organic Extra Virgin Olive Oil is where it is at.
