INSIDE MY KITCHEN: HOTHOUSE TOMATO CAPRESE WITH BURRATA CHEESE AND CILANTRO VINAIGRETTE





This quick and easy salad/appetizer takes advantage of the Farmer's Market bounty.  I use red hothouse tomatoes because they have a firm, sweet, mouthwatering flavor.  They also are available with a yellow skin which can provide a nice contrast to dishes you use red tomatoes in.

Recipe:

1ea  Hothouse tomato
3oz  Burrata Cheese (can be found in cheese shops and whole foods)
1ea  Avocado 
1/4ea  Red Onion
1ea  Thai/Purple Basil
1bu  Cilantro
2T  Rice Wine Vinegar
4T  Olive Oil
1t  Sugar
1/4t  Toasted Sesame Seeds (optional)

The hardest thing in this recipe is making the cilantro vinaigrette.  In a blender puree the vinegar, sugar and cilantro together.  Slowly drizzle in olive oil until emulsified.

Pour the vinaigrette onto the plate and carefully place a 1/2" slice of tomato on top.  Top with basil, burrata, avocado, onion and sesame seeds.

Enjoy as a great starter or as a meal.

TIP:  you could easily turn this into a great lunch or satisfying dinner by  turning the dish 180 degrees into a toasted french baguette.  MMMMMM
